Here's a simple way to cook Pork Asado, a versatile sweet and savory pork dish that can be used as filling for pies, empanadas, steamed buns, taro puffs or simply enjoyed with rice or maybe sandwiches.
The pork I've used here is pork loin, which is not fatty yet very tender even when cooked over a short period of time. You can also use other cuts like pork belly or pork shoulder which take longer to tenderize, so just increase the cooking time.
Ingredients & Procedure:
Cut into cubes 1/2 kilo Pork Loin, marinate with the following: 1 tbsp each of Chicken Powder & Corn Starch, 1/2 tbsp Salt, 1 tbsp Soy Sauce, 1/2 tbsp Fish Sauce, 1/2 teaspoon Five-Spice Powder and dashes of Ground White Pepper. Mix well & marinate for at least 1 hour.
To cook: Heat 3-4 tbsp of butter in a frying pan, saute 1 medium-sized piece of white onion that have been diced, add 1 tbsp of Turmeric Powder (this is for color & flavor).
Add in marinated pork and cook until pork have browned a bit, then add 1/2 to 1 tbsp of sugar (depends on how sweet you want the dish to be), mix then add 3/4 cup of water. Once it comes to a boil, cover pan with a lid & simmer for 10-15 minutes over low heat. After simmering, the pork is now tender & the much of the liquid have evaporated. Taste and adjust seasoning. Turn off heat, and let it cool down if you are going to use it as filling.
