We will need:
1 pork knuckle (I have a weight of 1.7 kg)
1 tsp coriander
1 tsp meat seasoning
1 tbsp vegetable oil
1 tbsp paprika
garlic
salt, pepper
Carefully remove the bone, trying not to damage the skin. We cut off thick pieces of meat so that the layer is the same in thickness. The meat on the skin and the cut pieces are well beaten off with a hammer. Salt, pepper, sprinkle with coriander, seasoning for meat, distribute the garlic and rub the meat. We place the broken pieces of meat on the skin to make a layer of the same thickness. Add spices and garlic, rub into the meat. We roll it into a roll, tie it with a thread so that it does not turn around. Mix paprika and vegetable oil. Rub the roll on all sides. We wrap the prepared roll in foil and put it in the refrigerator for 2 hours. We bake the roll in an oven preheated to 180 degrees for 2.5 hours. Without removing the foil, let the roll cool and put it in the refrigerator for several hours (preferably at night). We release the cooled roll from the foil, cut off the threads. Cut and serve!
