These potato rolls for two are the lightest and fluffiest rolls you'll ever make. It's the perfect way to use up leftover mashed potatoes too!!

Ingredients:
2 Tbsp warm water
1/2 Tsp yeast
3 Tbsp milk or leftover potato water
1/4 cup mashed potatoes
1 1/2 Tbsp butter
2 Tbsp sugar or honey
1/2 tsp salt
2 Tbsp beaten egg
1 1/4 cup flour (more if you are using mashed potatoes that have had milk, butter and seasoning added to them)
Directions:
Dissolve yeast into warm water and let sit for 5 minutes until foamy.
In the bowl of a stand mixer combine milk, mashed potatoes, butter, sugar and salt. Stir to combine.
Add in yeast mixture and beaten egg.
Add in flour and knead for about 5 minutes.
The dough should be tacky but not sticky. Add in additional flour, 1 Tbsp at a time until dough is nice and soft and pulls away from the side of the bowl.
Place dough into a greased bowl, cover and let rise for one hour or until double in size.
Punch down dough and form into four rolls.
Place in a greased baking dish and cover again, allowing to double in size, 30-45 minutes.
Preheat oven to 400 degrees F.
Bake rolls for 10-12 minutes or until golden brown.
Cover tops of rolls with butter after removing from oven if desired.
