Resep Fish Cake (untuk 6 porsi)
Bahan adonan:
200 gr daging ikan tenggiri
100 gr paha ayam filet
1 siung bawang putih
¼ buah bawang bombai
½ sdt garam
2 sdt gula pasir
¼ sdt merica
1 sdt kaldu jamur / penyedap (opsional)
1 sdm bubuk ikan gabus
½ sdm baking powder
50 gr tepung sagu
150 gr es batu
1 sdt minyak wijen
Bahan kuah:
1.2 liter air
3 siung bawang putih
1 buah wortel
½ buah bawang bombai
12 buah ikan teri kering
½ sdt bubuk rumput laut
1 sdm gula pasir
2 sdm kecap asin
½ sdm kaldu jamur / penyedap
Cara membuat:
1. Di dalam food processor masukkan ayam, ikan, garam, gula pasir, merica, bubuk ikan gabus, kaldu jamur dan es batu, haluskan hingga lengket
2. Masukkan parutan bawang bombai, bawang putih, baking powder, tepung sagu dan minyak wijen, haluskan hingga menyatu
3. Siapkan wadah kotak anti panas, alasi dengan baking paper. Tuang adonan lalu ratakan
4. Tutup dengan pemberat lalu kukus selama 30-35 menit di api kecil.
5. Buang bagian perut ikan teri kering, belah dua bawang putih, potong besar bawang bombai dan wortel
6. Siapkan panci, masukkan bawang bombai, bawang putih dan teri kering, masak tanpa minyak hingga harum lalu tambahkan air, kecap asin dan gula
7. Potong besar wortel lalu masukkan ke dalam panci. Tambahkan bubuk nori, masak selama 15-20 menit di api kecil
8. Keluarkan fish cake dari kukusan, biarkan dingin lalu potong-potong
9. Goreng fish cake di api sedang besar hingga kecokelatan, tiriskan
10. Untuk versi kuah rebus fish cake beberapa saat lalu tusuk dengan tusuk sate

Fish Cake Recipe (yield 6 servings)
Dough ingredients:
200 g Spanish mackerel fillet
100 g chicken thigh fillet
1 clove garlic
¼ pc onion
½ tsp salt
2 tsp sugar
¼ tsp pepper
1 tsp mushroom stock powder / MSG (optional)
1 tbsp snakehead powder
½ tbsp baking powder
50 g sago flour
150 g ice cube
1 tsp sesame oil
Soup ingredients:
1.2 liter water
3 clove garlic
1 pc carrot
½ pc onion
12 pc dried anchovy
½ tsp seaweed powder
1 tbsp sugar
2 tbsp soy sauce
½ tbsp mushroom stock powder / MSG
Steps:
1. In a food processor, add chicken, fish, salt, sugar, pepper, snakehead powder, mushroom powder, and ice cubes. Blend until sticky.
2. Add grated onion and garlic, baking powder, sago flour, and sesame oil. Blend until mixed well.
3. Prepare a heat-proof pan and line it with baking paper. Add the dough and spread evenly.
4. Weigh the top down, then steam for 30-35 minutes on low heat.
5. Remove the gut from the dried anchovy. Halve the garlic, slice the onion and carrot into large pieces.
6. Prepare a pan. Add the onion, garlic, and dried anchovy. Toast without oil until fragrant, then add water, soy sauce, and sugar.
7. Add the sliced carrot into the pan. Add seaweed powder, then cook for 15-20 minutes on low heat.
8. Get the Fish Cake out of the steamer. Let cool, then slice.
9. Fry the Fish Cake on medium-high heat until golden brown. Set aside.
10. For the Soup version, cook the Fish Cake for a moment in the soup, then skewer them.
11. Homemade Fish Cake is ready to serve.
