I mix all of my spices together and then work them into the meat in a bowl before I put them in a jar.

Love your videos! I got a Nesco electric pressure canner and just completely love it! It holds 5 pints or 4 quarts. I have a glass top electric stove so can't use my Presto until I can get a gas stove. Thanks for your great recipes! Love your Birria also!

You will love it. To serve, just shred it and warm it in a frying pan or crisp it under the broiler. Makes great tacos!

What a great recipe! I'm disappointed that I wanted to can carnitas only a few days ago, yet when I searched within KZitem, your video didn't come up. So, I didn't can carnitas; instead I just prepared them for eating and freezing. I also had trouble printing out your recipe in a way that didn't look awkward, so I had to hand write it. After the holidays I will give your recipe a try and let you know how it goes. I'm sure it will be wonderful!

Thanjs for watching and commenting. Plan on one pint jar for every pound of meat. If you want to make 6 pints buy a 6 lb roast to cut up or maybe closer to 7 lbs if it has a bone.

This is an interesting recipe that might be a good companion to my canned birria. Similar spices as your carnitas, minus the cumin, in a guajillo chili sauce as a marinade. I would have to test this one out with a few tweaks to match my boyfriend's traditional Michoacan recipe though. Mainly omitting the cumin and trying to get the flavors just right. Do you fry it up in a little lard when you open the jars?

I just pressure canned this yesterday and checked my lids and 2 jars didn't seal but should I throw it away? I can't find anything on the internet if it's safe to re-can the pork after sitting out 24 hour😞

No, it is unnecessary. The meat will release its own juices as it cooks. If you pack the jar loosely you might add a bit of broth or water but be careful not to overfill or you might induce siphoning. USDA instructions are to not add any liquid to raw packed meat.

@@jenniferkitkoski7473 if you are under 2000’ altitude you just use the standard setting for altitude on the IP Max. It only needs to adjust if you are over 2000’ so it’s a bit different from stovetop canning adjustments. Since there is a regulation of pressure by the temperature instead of the reverse. That temperature gauge function is AWESOME!

For thos new to canning: Never tap on your jars like she is doing. It could chip your rims thus making the food non-edible.

Thanks for watching but rest easy! Everything pressure cooks together for 75 minutes as per USDA guidelines for raw packed meat. No pathogens survive the canning process.

@@beastslayer9153 “authentic” carnitas is braised and fried pork. Orange juice, bay leaf and garlic are in most every recipe. The other ingredients could be considered “extra”. Mexican oregano is often used. There is no one recipe that is considered “authentic.” Lots of people add either milk or coca cola. Milk doesn’t work well for canning so I added lime and molasses to mimic that coca cola flavor.

It's important to note that the IP Max has NOT been tested for safety and accuracy, we have only the manufacturer's claim. I did read that McGill University had been testing it, but there is no word yet from them. I sure hope it tests well, as it would be perfect for what I need, but I'm not coming up with the cash until I am certain that it functions as claimed.

The USDA is a primary source for canning. However, they no longer do testing and have not for at least six years. Therefore they have not tested any of these new electric pressure canners. I did watch a video on Rose Red Homestead who has the device you put into you jars while they can to see if they hit the kill zone. It is a very interesting video. She is a Professor with a PHD in science and Utah Sate U told her how to get the device.

You can certainly use your stovetop canner if you feel more comfortable doing so. I am confident that the Max brings the food to temp as needed as there is a continuous temperature monitor and display which you don’t have with a stovetop canner. If the temperature drops to an unsafe level the Max shuts off and displays an error message so you know you have to start over. Sadly there has been no “official” food recipe testing using any newer canners. Everything officially government tested is decades old.

Being a Canadian product, Instant Pot Max canners HAVE BEEN WELL TESTED BY THE CANADIAN VERSION OF THE USDA. McGill University has tested and approved the IP Max, and it is fully approved! Our own USDA does not test anything anymore. I feel the IP Max is a safer canner than most stove top canners because of its built-in safety measures. I use mine weekly and love it.

That’s a pressure cooker. Pressure canners will allow you to monitor the pressure and temperature for your altitude. It IS NOT safe canning procedure to use a pressure cooker to can food. You can get botulism or worse feed it to others by not following safe pressure canning guidelines and the appropriate equipment.

Thanks for watching and commenting, Deborah. The Max a legitimate canner with a specific canning function as well as being a pressure cooker. I have researched carefully its use. There is a continuous internal temperature readout on the display. The pressure is adjusted by computer to achieve the optimal internal temperature. It isn't the pressure that matters, it is the temperature that needs to reach a certain level. Pressure is just a means to achieve that temperature. There is also a setting where you input your altitude so the machine can figure out how much pressure will be needed to achieve the 240-250 temperature inside. If at any time the internal temperature drops to an unsafe level, the unit shuts down and you need to reprocess. With a stovetop canner, you don't know what the internal temperature of the canner is. You are only assuming, due to the pressure. And the pressure gauge needs to be calibrated annually. Does anyone actually go to their agricultural extension and do that? I doubt it. If anything, the Max is safer than a stovetop canner. Stovetop canners are great but not without their pitfalls, the most common of which is human error. Incorrect venting will cause an unsafe low temperature, as will any drop in temperature/pressure by adjusting the heat on the stovetop. The key in canning is to be able to understand the process. Check out Rose Red Homestead's videos on the Max. She uses the data logger that labs use inside the jars to calculate the temperature every minute during the canning process INSIDE THE JARS to determine if their program is safe. It has passed every test she has put it through, with flying colors.

Go back and pause the vid when it is focused on the canner.. it has a "canning" setting.. It had all the settings..
