Filefish Soup with Tofu & Celery

沙鯭豆腐芹菜湯
材料:
沙鯭(大)2條
豆腐1磚
芹菜2札(約半斤)
薑1小舊
處理:
1. 沙鯭,打鱗,清除內臟,清水洗乾淨,用廚紙索乾,打橫1開2。
2. 薑,去皮,切片。
3. 豆腐,清水洗淨,切一舊舊。
4. 芹菜,切去根部,切段,清水洗乾淨。
烹調:
1. 大火在鑊內燒熱油2湯匙。
2. 爆香薑片。
3. 魚,用廚紙索乾,放鑊內,轉中火煎透。
4. 如果有白煙從鑊中冒起,表示不夠油,從鑊邊加入油1湯匙,繼續煎。
5. 魚的一邊已煎至金黃色,反轉繼續煎。
6. 魚的兩面已煎至金黃色,加入豆腐煎一煎。
7. 轉大火,加入大滾水1升半,直至完全滾起。
8. 轉中火,滾15分鐘。
9. 加入芹菜,再滾5分鐘。
10. 完成,可享用。
File fish soup with tofu and celery
Ingredients:
File fish (large) 2 Nos.
Tofu 1 cube
Celery 2 bunches (about 0.5 catty)
Ginger (small) 1 No.
Preparation:
1. The fish, get it scaled. Remove intestines. Rinse thoroughly. Dry with kitchen towels. Divide each one into 2 shares horizontally.
2. Ginger, get it peeled and sliced.
3. Tofu, rinse thoroughly. Dice in cubes.
4. Celery, cut off roots. Cut in lengths. Rinse thoroughly.
Steps:
1. Heat up oil 2 tbsp at high flame in wok.
2. Fry ginger well.
3. The fish, dry with kitchen towels. Put in wok. Turn to medium flame. Fry well.
4. If there is smoke arising from wok, that means oil is not enough. Add in oil 1 tbsp alongside the wok and continue frying.
5. One side of fish has been fried into golden yellow, flip over and continue frying.
6. Both sides of fish have been fried into golden yellow, add in tofu and fry for a while.
7. Turn to.high flame, add in boiled~up water 1.5L, and wait for boiling up.
8. Turn to medium flame, boil for 15 minutes.
9. Add in celery, boil for 5 minutes more.
10. Complete. Serve.
