A demonstration on how to make Classic Scones from England with the NY Times recipe.
Ingredients:
2 cups cake flour (240g)
1/2 tsp salt
2 tsp baking powder
2 tbs caster sugar (+ more for later)
5 tbs cold unsalted butter (70.6g), cut into small cubes
1 egg
1/2 cup to 3/4 cup whole milk
1. Heat oven to 450 degrees F.
2. Put flour, salt, baking powder and sugar in a food processor or mixing bowl to combine
3. Add the butter and combine until the mixture resembles corn meal or sand.
4. Add the egg and just enough milk to form a slightly sticky dough
5. Turn the dough onto a lightly floured surface and knead once or twice. Do NOT overwork the dough.
6. Press into a circle (2-inch rounds). Dip your cutter into flour to prevent sticking.
7. Place rounds on parchment on a baking sheet.
8. Brush the top of each scone with some milk and sprinkle granulated sugar on tops.
9. Bake for 14-15 minutes or until scones are beautifully golden and brown.
10. Serve with clotted cream and jam.
