In 2020 I thought the world was ending so I grew around 50 cucumbers along with countless other plants. Needless to say I ended up with way more than I could even give away. I pickeled using a spicy recipe and a sweet. They were fantastic. But eventually I couldn't eat them all before they got too old.

I was wondering about fresh jalapeño? On the farm, sometimes we would just slice up the cucumbers and fresh tomatoes, place in your dish, place white vinegar and whatever else you want, and serve it that day on the table. You should also plant some dill. My grandma always had a row or two in her garden, and the Dill smelled heavenly.

Over 200 different types of plants, trees, vegetables and fruits, wheats, shrubs.. and we have fresh produce all year round! Currently our grape vines are getting us over 30 fresh bunches and recently we also made homemade jam to last us till next year again. Herbs last the whole winter when harvested and frozen! This is exactly how I do my pickles! I add a 1/4 teaspoon of calcium chloride to each jar and water bath can them for 10 minutes. Your jars will seal and are now shelf stable for a year, and the calcium chloride ensures they stay crisp and don't get soggy.
@tara479

So you water bath them then drain the water just add everything?
@TD-izAbxy

@tara479 no, you would your pickles to a quart or pint size jar, add the brine, and calcium chloride, add a lid and ring to each mason jar and put the jars in a stock pot, fill with water until one inch of water covers the top of the jars, bring to a boil, boil for ten minutes. Turn off the heat, let them sit Five minutes, remove jars and set on counter on a dish towel. Leave them alone a few hours. The lids will seal. Remove the screw bands and they're now shelf stable for a year

Yes, but we did sweet pickles. We sold our house & the huge garden, put furniture in an apartment, packed a 40-foot ketch, and sailed to Hawaii. We enjoyed our pickles in various harbors over the next 6 months. When I flew back to spend a summer with parents 4 years later in Lanai, Hawaii, we enjoyed another jar. Six years after that, they moved to Tucson AZ, and I brought the last 2 jars - the pickles were still fantastic!
