I was a restaurant inspector, and I agree he is a little "loose" with his sanitation techniques, but if you watch closely you will see that he actually knows what he's doing. For one thing, he most likely has a 5 to 8 % chlorine solution in the container where he drops in his knives and utensils, and he periodically dips his hands in there to sanitize them, and he probably dampens his towel in it too. Two; every thing that he cuts on the cutting board is eventually exposed to heat sufficient enough to kill any bacteria (140 - 165 F), he usually cooks with very high temps. If he was serving anything uncooked off of the cutting board; then he would have a problem. If this guy was food poisoning people he would have been shutdown by the Health Dept. or sued out of business years ago.

@@truethought2581 Yes he did, and then he placed it back into the hot pan of boiling sauce, which instantly renders any bacteria it may have picked up DEAD! That is not an uncommon practice in many busy restaurants during food prep, although it is not a recommended practice.

As you said, bacteria is killed by heat, but he touches utensils, spices, surfaces in general with his contaminated hands. What if he is to garnish a dish with something uncooked like herbs? No way in hell he's gonna sterilize the whole kitchen after this, which means that there is a severe risk of cross contamination for all the dishes afterward. Splashing fingertips in old chlorine solution won't help much. Neither will quick wipes with a dirty cloth even if it had some chlorine on it at some point in time. When sanitizing in restaurants, the diluted solution is to be replaced regularly throughout the day as it loses it's "potency"

@@alexanderostman4465 All valid points. But; he in fact does appear to regularly use the sanitizing solution. From the video we can't tell how often he refreshes his sanitizer during the day, or how often he is submerging his cleaning towels (and hands) in the solution between dish preps. If there is sufficient free chlorine available in the solution, it is effective. Keep in mind, he was doing this demonstration on camera for a KZitem spot, so time may have been an issue for him here; and he may have been taking some "shortcuts" for time purposes. Also, we don't know if he has regular help in the kitchen that normally handles some of the messier prep work or clean up with raw meat etc. (if his kitchen is busy he most likely does). I don't know how many years this guy has cooked in a restaurant , but I do know if recurring food poisoning was a issue with him, he would be out out of the business by now. Somebody should check with his local health dept. to see if he has had a problem in the past (public records). I've been around a lot of restaurant kitchens, and seen lots of "professionals" cook, and believe me, I have seen worse. My point was that this guy seems to know what he is doing, even-though some of his techniques and practices appear to be "loose".

Cooking for friends and family. Noone hesitates to try his cooking. Noone shys away. Noone is crying in fear of cross contaminants. If I were there I'd ask for my own plate, I'd have a hard time dealing with just a taste. Love the videos! Keep em coming.

To all the people saying this isn't a curry, it's basically a "country captain" dish. Kind of a southern take on Indian curry, that's really good. Storry behind the name of recipe is an 1800s Era ship captain came home to Southern US and asked a local cook to make a curry dish, and country captain was born

American style Midwest Curry - this was made years ago while I was growing up and passed off as curry. Cut and pounded the chicken on the cutting board then .......

The knife bucket contains a bleach & water mixture. I don't know any chefs that use their knife once then run it thru a wash cycle..You sanitize everything at the end of the evening. All veggies are used up that are cut into each evening.

yep looks tasty. I do with more curry sauce as follows. I always do either a couple of chicken brests or a whole chicken in the oven. In the mean time I prepare the curry sauce. As follows: a chunk of butter in the pot and an half very fine chopped apple. Stove the apple in the butter. Put a second pan on with butter on medium low. Let butter melt and get some heath. Do in a good half spoon of flour. Stir gently so that butter and flour mix without overheating. Join the yellow curry powder and be very generous. Heat up the pan for a moment and add milk while using the whisk. Basically you make a curry bechamel sauce. Continue until the right consistency

I’m going to give this recipe a try this weekend. Yeah, yeah...it’s not an authentic interpretation, but it’s clearly designed to be a quick, easy and tasty meal you can throw together after a long day at work when you really probably don’t feel like making a huge production in the kitchen. Seems like many people haven't seen the kitchen of a restaurant or the contents of a grease arrestor. Most would vomit at the sight or smell of either. More worrying is food left out to defrost or cockroaches looking for a feed and the range hood extractors are always filthy and dripping grease and subject to flue fires. The kitchen sinks are always blocking because of the fat. I could go on but shouldn't, as a plumber I've seen lots of it

@Old timer hot shot lol, I'm in hospitality school studying this shit as we speak, he broke practically every rule there is when it comes to cross-contamination. if that had been any kitchen but his own he would have been reprimanded, and if he continued to do it he would have been fired for endangering customers (do you have any idea what a clusterfuck a food poisoning lawsuit is for a restaurant? it's basically a death sentence for that business if it happens).

This might be one of the most disgusting things I have ever seen. The lack of attention to any food safety, all of that cross-contamination, slamming knives tip down into a bain, wiping chicken goo all over the board and tossing the rag onto the table, then not washing hands and grabbing bottles. Just fucking awful all around. What a fucking insult to actual food professionals.

I know that. In another video he tasted juice from a can with his finger and then put chicken in a frying pan and everybody said, OMG he just picked up chicken after licking his finger. If you watch closely, he put his left finger in the container with the juice and pick the chicken up with his right hand. I think the guy is very aware of being sanitary
