Cooked this last night with a whole siakap/seabass. Only things diff was I added 1 stalk lemongrass and sauteed the paste about 5 mins till some reddish oil emerged. Since my famiky can't take spicy I used 2 deseeded big red chilies and only 2 chili deseeded. I also added some julienned bunga kantan (torch ginger flower) petals onto the fish before steaming. The sauce is sooooo delicious. Thanks for this yummy recipe.

I have an easier way to peel tomatoes: Boil a kettle of water. Put the tomato in a coffee mug. Pour the kettle's boiling water into the mug and wait about 30 seconds. You can now easily peel it under running cold water.
