This delicious cake is a hit with everyone. A little bit of work involved but the reward is worth the work.
Recipe
1/2 cup/ 1/4 pound of softened butter
3/4 cup of sugar
2 eggs
1 1/2 cups of flour
(If using plain or all purpose flour add 1 1/2 teasp. baking powder)
1 teasp baking soda
1 cup of sour cream
Topping
Raspberries - Fresh or Frozen
Crumble
2 tablesp of butter/ 1/8 lb butter
1 cup of shredded coconut (sweetened or unsweetened)
1/2 cup of packed brown sugar
1 tablesp of flour
1/4 teasp of cinnamon
Bake at 160 C/320 F for 1 to 1 1/2 hours
