Nguyên Liệu - Ingredient
Rau câu - 10g Agar-Agar Telephone Brand
Đường cát - 100g Granulated sugar
Nước cốt dừa - 150g Coconut milk
Xoài chín - 325g Ripe mango
Nước - 700ml Water + 25ml (for mango )
Muối 1 tí - A pinch of salt
Direction Notes
- Mix water + salt + sugar + agar in a pot. Bring it to a boil, med high heat. Instant Pot, Saute, More. Stir constantly.
- Then lower the heat. IP Saute, Less. Keep stirring and simmer for 5' until the agar agar powder is melted completely.
- Take out 500g of the agar mixture, set aside
- Pour the coconut milk into the pot, stir to combine with the agar mixture. Medium heat. IP Saute Normal. Bring back to a boil. Then lower the heat, Saute less, simmer for 5', stir gently.
- Transfer the coconut mixture to the mold.
- Pour the 500ml agar mixture back to the pot. Add the mango puree and 25ml water. Mix and constantly stir to combine. Med heat. Saute Normal. Bring to a boil. Then simmer for 5 minutes. Turn the heat to warm, waiting for the white layer is firm enough.
- Gently pour the yellow over the white so it won't blend with the layer beneath.
- Let the cake cool down for at least 1 hour.
