When raw gram flour mixture is added to already hot kadai cooking stuff, it needs to be tossed slowly at intervals, otherwise the gram flour lump would be formed at the bottom. When it gets cooked, then the lid could be placed to cover the dish for a nice blending. Maharashtrians do like that in Mumbai
