So Today we are Re-Canning shop bulk bought, English Mustard & Sweet & Sour Sauce into portion sizes.
I do this for 2 reasons, firstly I find it much cheaper to buy in bulk instead of quantity and secondly, as I am trying to stock my pantry for a 12 month period this allows me to portion size, and therefore lasting me longer. The sweet & Sour will probably last six months usage as we will probably eat a jar a month, but if we dont eat it that often, it will last on a shelf in the pantry for up to 3 years. The Mustard may actually take longer than 12 months for us to use, and again will safely store on pantry shelf for at least 3 years.
These Two products can be water bathed for 10 mins in a canning Machine (Mine is a Digital Canner), Or can be water bathed in a pan with a lid, by placing a tea-towel at the bottom of the pan, and filling up to an inch of water over the top of the jars, again boiling for 10 mins. once the boiling time is over leave lid in place for 20 mins to allow the steam to dissipate and also for the temperature in the jars to adjust.
