SERVINGS: 2
INGREDIENTS:
FRIED KATSU
• 2 PCS PORK STEAK CUTLETS
• 2 CUPS FLOUR
• 2 EGGS, BEATEN
• 2 CUPS JAPANESE-STYLE BREAD CRUMBS
• 2 CUPS OIL FOR FRYING
• 1/8 TSP SALT
• 1/8 TSP PEPPER
SAUCE AND RICE
• 1 CUP MIRIN
• 1/2 CUP SAKE
• 2 TBSP KIKKOMAN SOY SAUCE
• 1/4 TSP DASHI POWDER
• 1 MEDIUM SIZED ONION, SLICED
• 1 STALK SCALLION, SLICED
• 2 EGGS, BEATEN
• 2 CUPS RICE
PROCEDURE:
1. SPRINKLE SALT AND PEPPER ON THE PORK STEAKS. DIP THE PORK STEAKS INTO FLOUR, EGG, AND BREAD CRUMBS (IN THAT ORDER).
2. PRE-HEAT OIL IN PAN TO 350 DEGREES F.
3. FRY THE PORK STEAK UNTIL GOLDEN BROWN. SET ASIDE.
4. IN A CLEAN PAN, MIX TOGETHER MIRIN, SAKE, SOY SAUCE, AND DASHI POWDER. SIMMER FOR 5 MINUTES.
5. ADD THE FRIED CUTLETS, ONIONS AND SCALLIONS. SIMMER FOR 5 MINUTES.
6. ADD THE BEATEN EGG. WITH A TOOTHPICK, MIX THE EGGS SLOWLY TO CREATE EGG SWIRLS. SIMMER FOR 1 MINUTE (DO NOT OVER COOK EGG, OR ELSE YOU’LL GET A SCRAMBLED TEXTURE)
7. TURN OFF THE HEAT. POUR THE KATSUDON ON TOP OF HOT RICE. SERVE WHILE HOT.
