Red Cabbage Sauerkraut
2 medium sized red cabbages
1 tablespoon kosher salt
1 teaspoon citric acid
Juice of 1 medium-sized lemon
For 1 liter jar
Half a tea glass (63 ml) of apple or grape vinegar
And enough boiled and cooled water to cover it.
Cabbage is cut thinly.
Add salt, citric acid and lemon juice, rub the cabbage a little without crushing it and let it sit for half an hour.
It is filled into 1 liter jars by pressing. Add vinegar and water and close the lid. Keep it in a cold place or in the refrigerator for 3 days. Then it is ready to be eaten with pleasure.
