Hello friends! There have been a lot of questions about why Socks had to leave the house, and that is because he does not belong to us. 😂 Our pet dog Speedy doesn't do well with other animals, he is pretty scared of them, so we do not have multiple pets at the moment. I hope that clears up some of the confusion.

Try canned black beans, canned or frozen corn, drained Rotel style tomatoes (keep the juice to add back in if it's too dry--I also love to drink it), diced onion, cilantro and a hint of cumin and salt. Mix well, use tortilla chips to scoop. For a church lunch, I add in cold cooked rice for a really fancy schmancy salad. Good video.

Many moons ago, my Italian grandparents taught us to always salt the tomatoes, it brings out the flavor. On sandwiches and such I have them as the last ingredient and salt them. In cold salads I put then all together, then sprinkle a bit of salt, then mix. Delicioso.

I am so late to this but have a few ideas picked up from a recent trip to California. There were so many toasts and bagel situations. A really good one was the California bagel: toasted bagel, avocado, provolone, turkey, and tomato. They also did a smoked salmon toast with the smoked salmon, capers, dill, cream cheese on a toast. Those were my two favorites. :) Yogurt jars were popular too.

I'm in Missouri and the heat has been ridonculous, we bought our first home early 2020. This summer we were so excited to finally do some planting. Our plants burned and died. They got sun scorched. To be fair, I also am the grim reaper of plants. So... there's that too. I always use larger burrito size and I can tuck the bottom enough so my filling never falls out. Since it can also hold more I usually only need 1.

We've also had a lot of rain this summer. So in the summer I always keep at least 1 can of tuna in the fridge to make tuna salad. I cannot stand a warm tuna salad. When I make the weekly meal plan I check the weather to see if it's a day I can cook or not.
