Look up Butcher Wizard. He shows how to break down things like rib roasts and the like. Shows how to easily remove the ribs first so it's easier to deal with.

I prefer to cook the whole roast to rare in the oven, than cook individual steaks. The fat on the outside edge has a nice roasted flavor. When it's cool, I slice into steaks and freeze. I just have to defrost one at a time and sear both sides. When I find the rib roast on sale, I purchase several and prepare them this way.

If you are going to cut the steak off the ribs, you can cook them in a smoker, oven or crockpot. Save a couple so it’s worth the trouble. I would use butter as well and ladle it over the steak.

The left over bones are the back ribs. Just grill them on slow heat, and eat them as ribs.

Invest in a good blue tooth/Wi-Fi thermometer then set your oven to around 200 degrees. Put your steak in the oven until it reaches around 118 degrees then finish it in the frying pan. Use tallow, bacon fat or butter but not H20.

Hi Jay... I cut the whole lot of bones off first and then cut the steaks on a rib roast like that. It cuts easiest when very cold or partly frozen. I roast the meaty bones in my oven just the same way as for short ribs. Or I roast them and make the meaty broth as you also mention.

I’ve noticed Costco raised the price of their NY Strip steaks from $9.99 to $11.99👎 over the past few months. I’ve been thinking of getting a roast for less $$$ and cutting them down to steaks myself. Thanks for showing this. I’m going to have to pay a visit to my local Aldi.👍

@costco, i get whole top sirloin with fat cap, it is excellent flavor, butcher with the grain to cut into steaks. In NY it is about 6.69 a pound good amount of fat to muscle meat ratio. BTW I am also carnivore. Have a great day!!!

I smell a Bill Gates conspiracy! #WEF Btw, take those bones and bake them in the oven at 275F° or so for a couple hours wrapped in foil. Add low carb bbq sauce and broil for another 5min and you have BBQ ribs!

A master butcher told me not to use a carving knife like a saw (back and forth), instead use forward slicing cuts, or reverse slicing cuts, it's a game changer.

Personally I find the steam with the lid on adds plenty of water back into the pan. No need to add any water. I personally don't add water. But if it works for you that is all that matters.

I'm noticing that you're having to "saw through" your cuts. That means your knife is not safely up to the task. Sharper is safer. Also, I highly recommend that you place a kitchen towel aka bread towel underneath your cutting board. I just joined Costco recently, so I'm going to be making a similar purchase. Thanks

Sometimes if buy a standing rib roast like that the butcher will cut for you and you will still pay the same price as if it wasn’t cut

I myself i take off the ribs them cut through into steaks i cut all the meat out between the ribs and that will make a meal i freeze the bones some times make bone broth or i give my house hippo a bone raw to clean her teeth and get the collagen and scraps off have a great evening!

Oh please place a damp towel or paper towel under ur cutting board to keep it from moving. Id hate to see u cut urself. 😫😫😫😫😫🙏🏽
