Ash Gourd Halwa
(Serves 4-5)
Ingredients:
2 kg Ash Gourd (Grated to make 4 cups)
1/2 cup ghee (total)
10-15 chopped cashews
10 chopped almonds
Add the Ash Gourd water (opt. as cooking time takes longer)
1 pinch of orange food color (saffron is preferred)
1/4 tsp salt
1-1.25 cup sugar (as rq.)
Procedure:
1- Take 2 kg Ash Gourd. Cut, remove the skin, and grate as shown to make 4 cups.
2- In a pot, add 3 tbsp ghee, 10-15 chopped cashews and fry. Then, remove and keep aside.
3- Add 10 chopped almonds to the pot and fry. Then, remove and keep aside. (The total ghee rq. for this recipe is 1/2 cup.)
4- Add the grated Ash Gourd to the pot and fry well on high flame.
5- Add the Ash Gourd water (opt. as cooking time takes longer). Cover and cook until it is 3/4 dry.
6- Add 1 pinch of orange food color (saffron is preferred), 1/4 tsp salt and some ghee. Mix, cover and cook for 2-3 mins.
7- Add some ghee and mix well. Then, add 1-1.25 cup sugar (as rq.) and mix.
8- Once again. add some ghee and mix. Then, cover and cook. (Total time taken to cook is 45-50 mins.)
9- Now, add the previously roasted nuts and mix well for 4-5 mins until the ghee separates. (Remove the excess ghee if you want.) It's done!
