damn, I got the wrong cabbage, for some reason I got the Asian cabbage (the one used for kimchi) and not western cabbage. Will try nevertheless. edit: I don't know if it's the right taste because I never had this dish before but it's real good. It's like AGLIO E OLIO but with cabbages. I added a little bit of lemon juice to cut through the grease and ate the whole thing :D

Its an extra fine dice. Just requires patience, a very sharp knife, and practice. Practically liquifies in the pan with a little oil because the cell membranes are just that fragile after you dice it that fine.

So much fluff but still don't know not to use a metallic utensil on a teflon pan, please.
I have half of a savoy cabbage head in the fridge. I’ll try this. It’s kind of similar to how I make rapini or other cabbages - cook with garlic and pepper flakes, then add some vinegar (balsamic, sherry, or some other tasty kind). But I cut them smaller, and serve in a bowl, so it’s not a main course but a snack or a side/salad.
