In this video, i'll share with you some tips about how to make the perfect roasted chicken by introducing a new technique I personally love "Brining the chicken" before roasting it, to get that amazing crust on the chicken.
Part one:
a) Preparing the chicken:
This simple chicken brine will help make the meat more tender and juicy.
To brine the chicken, pour 3L of water into a container, add in 6 table spoons of salt, 1 tea spoon of dried coriander seeds , and some bay leaves. Stir until the salt has dissolved, place chicken in the brine, cover, and refrigerate 4 hours to overnight for a whole chicken.
b) Seasoning the chicken:
Drain and pat the chicken dry before seasoning.
Zaatar (thyme)
Lebanese sweet pepper
c) Before putting it in oven use a moisture bag in order to keep all the juice of the chicken.
And roast in oven for 60 min to 70 min at 180 degree
Part Two:
Freekeh time:
In a medium to large pot heat 50 ml of extra virgin oil
To which add 150 grs finely chopped red onions
Add 1 large garlic clove
and pour in 500 grs of dry freekeh after rinsing it three times to remove all the dirt
Add 200 ml of 961 beer and 700 ml chicken stock
Reduce heat and let it simmer till it s perfectly cooked
