One of the delicious dishes I made in the instant pot. The chicken came out so juicy and cooked perfectly. Also the rice was so fluffy and soft and flavorful. The whole dish was so easy, elegant and delicious. My whole family loved it. This dish is very famous in Egypt and usually they stuff pigeons with Freekeh but here I used whole chicken so the dish is more acceptable to most people also it is very hard to find pigeons in any market.
Freekeh is a cereal food made from green wheat that goes through a roasting process. It is an ancient Arabian dish derived from Levantine and related cuisines of North Africa. The wheat is harvested while the grains are yellow and the seeds still are soft; it then is piled and sun-dried. The piles are carefully set on fire so only the straw and chaff burn, not the seeds. In these controlled conditions, the high moisture content of the seeds prevents them from burning. Next, the roasted wheat is subjected to threshing and sun-drying to make the flavor, texture, and color uniform. This threshing or rubbing process of the grains gives this food its name, farīk or “rubbed”. Finally, the seeds are cracked into smaller pieces so they resemble a green bulgur. "wikipedia "Freekeh is known for its high content of protein, dietary fiber, B vitamins, and several dietary minerals, especially manganese.
The required Ingredients for chicken marination :
2 tablespoons yogurt
2 tablespoons olive oil
1 tablespoon tomato paste
1/2 teaspoon allspice
1/4 teaspoon cloves
1/4 teaspoon nutmeg
1/4 teaspoon cardamom
1/2 teaspoon cinnamon
1/4 teaspoon turmeric
1/4 teaspoon black pepper
2 teaspoons salt, or to taste
One envelope of Mexican Sazon Goya (optional)
2 tablespoons vinegar or lemon juice
Mix all materials well and wipe a whole chicken on the outside, inside and under the skin and put in the refrigerator for at least 4 hours, preferably a whole night.
Now let's prepare the Freekeh
1 1/4 cup freekeh, wash twice, then soak in water for 30 minutes
1 cup ground beef
1 tablespoon of butter or ghee
1/2 teaspoon cinnamon
1/4 teaspoon cardamom
1/4 teaspoon nutmeg
1/4 teaspoon black pepper
1/4 teaspoon allspice
1 teaspoon salt or to taste
1 1/2 cups of water
Cook the minced meat over a medium heat until it becomes brown.
Add the freekeh and stir well.
Add all the spices and salt and stir well.
Add the water and stir well, then cover and cook over a high heat until it boils, then cook it over very low heat over a small burner until all the water is absorbed and cook for about 20 minutes and then leave to cool completely.
Stuff and cook the chicken
-Stuff chicken with the cooked freekeh. Tie legs with kitchen twine and the skin using a wooden skewer.
-Place the trivet in 6 qt instant pot, then add about 2 cups of chicken or meat stock
-Add giblets, heart and liver optional
-Place the chicken, keeping a distance from the top
-Clean the top of the inner pot (very important)
-Make sure the plastic ring is in its place and the handle is in the sealing position
-Close and pressure cook for 8 minutes per pound (about half a kilo)
-When time is finished ,wait about 10 ~ 15 minutes then release the remaining pressure
Or, do an NPR .
-Remove the chicken, brush it with the liquid in the pot, and place it under the broiler until it turns brown from top.
How to cook basmati rice:
Remove the gizzards, the heart and the liver from the broth
Add 2 cups of washed basmati rice
Add spices :
1/2 teaspoon cinnamon
1/4 teaspoon cardamom
1/2 teaspoon allspice
1/4 teaspoon black pepper
Mix well, close and press Rice Auto button for 12 minutes
When the time is up, immediately release the pressure QPR
How to serve:
First remove strings and skewers from the stuffed chicken then put rice in a big serving plate, then put the remaining freekeh, then the stuffed chicken on top. Decorate with fried almonds and raisins. Finally serve with salad and pickles and fresh herbs. Enjoy the most delicious and elegant dish.
