This has to be one of the most cozy and comforting soups! 🍲 If you love pumpkins, but hate the process of cutting the tough outer skin, this resolves your problem by roasting them along with the skin until it softens and becomes much easier to remove. 🎃 Roasting the onion, garlic, tomato, and pumpkin together in the oven will infuse your soup with rich, caramelized flavors. It is an extra step, but it is so worth it if you have the time! Otherwise, you may simply saute onions and garlic in a pot on the stove, add your chopped pumpkin (with skin removed), along with tomatoes and the rest of the seasonings and spices, and cook till it turns into soup! By roasting these ingredients together, you'll intensify their flavors, creating an extra delicious pumpkin soup. Adjust the seasonings and additional ingredients as desired, and enjoy your flavorful homemade roasted vegetable pumpkin soup! 🌿 The best part about this recipe is that it can easily be transformed into a yummy creamy pasta sauce in just two minutes. 📝 INGREDIENTS:
For roasting the vegetables:
• Pumpkin (350 - 400 g), cut into slices skin on (sub: Butternut squash)
• 1 large yellow onion, quartered
• 2 handfuls of cherry tomatoes cut into halves (or 2 regular tomatoes)
• 1 bell pepper quartered (sub: carrot)
• 6-8 large garlic cloves (peeled)
• 1/2 teaspoon black pepper
• 1 tsp salt
• 1 tsp paprika
• 1/4 teaspoon ground cinnamon
• 1/4 teaspoon chili flakes (adjust to taste)
• 1 tsp sugar
• 1-2 tbsp olive oil/melted ghee or butter
For making the Soup:
• 2 cups chicken/vegetable stock
• 1/2 tsp dried thyme
• 1/2 tsp dried oregano
• 1/2 tsp dried basil
• 1/4 tsp garam masala (optional)
• Salt + pepper to taste
• 1 cup milk
Optional: 1-2 tbsp nutritional yeast (sub: parmesan cheese)
For turning soup into pasta sauce:
• Cornflour Slurry (2 tbsp cornflour mixed in ¼ cup of milk)
• Cheese (feta & cheddar or whatever you like)
❃ PROCESS ❃
1. Preheat your oven or air fryer to 200°C (400°F).
2. Rinse the pumpkin thoroughly and scoop out the seeds and guts using a spoon or ice cream scoop. Keep the skin on!
3. Prepare a baking sheet/roasting pan lined with parchment paper or foil and add pumpkin chunks, onion quartered, garlic cloves, chopped bell pepper and halved cherry tomatoes. Place the tomatoes over the garlic cloves to prevent them from burning.
4. Sprinkle salt all over along with seasonings: black pepper, paprika, cinnamon, chili flakes, dried herbs and sugar.
5. Drizzle olive oil or melted ghee/butter all over. Toss gently to ensure everything is evenly coated.
6. Roast for about 30-40 minutes or until the pumpkin is fork-tender and slightly caramelized, and the edges of the onion, garlic, and tomato have started to brown. Once done, remove them and allow them to cool for a few minutes. If roasting in an air fryer, 15-20 min should be enough and you may want to reduce the temperature as well.
7. Using a knife, easily cut off and discard the softened pumpkin skin.
8. In a large pot add chicken/veggie stock and bring it to a boil, then add all the roasted veggies in it along with some dried basil, oregano, and thyme/rosemary. Optionally add a bit of garam masala. Let it simmer for a few min allowing the flavours to meld and then add 1 cup of milk.
9. Taste and add salt/pepper as needed.
10. Before turning off, sprinkle with grated cheddar/parmesan cheese or nutritional yeast for added flavor.
11. Allow the soup to cool slightly, then blend it to a smooth texture using an immersion blender or food processor.
12. Serve hot, garnished with a swirl of yogurt or cream, or drizzle of olive oil if desired. Enjoy your delicious homemade Roasted Pumpkin Soup!
13. To use it as pasta sauce, place it back on the stove and add plenty more cheese (as to your preference) and a cornflour slurry (2 tbsp cornflour mixed in a 1/4 cup of milk) and cook for 2 minutes or until thickens. Add this to your pasta along with some grilled chicken (or your preferred protein) and enjoy!
