Hi, guys! Since I’ve started working in a butcher shop in 1986, butchers have been making roastsof many cuts. This happened because we used to sell cuts for roasts, and the cuts for steaks stayed behind, so we used to roast cuts for steaks. Back then, we used to put a barbecue grill to sell pot roast and tried to make the most of the cuts that had a certain volume of fat and the topside was one of the alternatives. In this video, I bring this memory and, I assure you, you can make something amazing with it. It’s shaped like our beloved rump cap, because it’s still the queen of Brazilian roasts.
