RECIPE BELOW: This is a classic Cantonese old-school comfort food! The unique unctuous aroma and texture of the salted fish go really well with the light and fluffy minced pork patty. It's super yummy-you'll find yourself washing it all down with bowls of rice, it's so, so delicious! ENJOY!
Serves 6-8
Ingredients:
• 1# fatty ground pork
• 2-3" piece fermented salted fish, soaked in hot water for 15 mins, scale &cut in 2-3 pieces (Salted Corvina Fish from Venezuela-Fisherman Brand LA Oriental Imports)
• 1/2 C soaking liquid from salted fish, add to pork a few Tbsp at a time, mix well in one direction
• 1/3 C water chestnuts, chopped
• 1-1.5" knob ginger, sliced and cut into thin strips
• 1.5 Tbsp minced ginger
• 1 green onion, minced

• 1 Tsp White pepper
• 1.5 Tbsp Shaoxing wine
• 1.5 Tbsp Sesame oil
• 1/2 Tsp Baking soda
• 1 Tbsp Cornstarch
