Cut chicken into bite-sized pieces, mix with the marinade and refrigerate for a few hours (can freeze some to make another day), then thread onto skewers with capsicum, red onion and button mushrooms. Cook on BBQ (hood down) turning as needed until cooked through.
(Note: If using bamboo skewers, soak them well first or they’ll burn on the BBQ.)
