Recipe made for roughly 2-3 portions of stingray fillets (adjust accordingly to your amount)
Blend the following:
- 4 red chillis
- 6 shallots
- 6 garlic
- 1 inch ginger
- 1 lemongrass (the white part)
- sambal paste (100-150g)
- 1 tbsp of toasted belacan
You'll need the following as well:
- 1 cup of Tamarind water (you can do this by soaking tamarind paste and remove the seeds just keep the water)
- salt to taste for the sambal and to salt the stingray
- sugar/gula melaka
- pandan leaves
