When cooking with Red Oak you might want to wait until the flame is gone and just use the coals. Ajust your grill so it is all the way down. Once your chicken starts to spit start moving the grill up so it does not burn. You should use less fuel and have more flavor. Add the oak as needed. I live in Santa Maria and this is how I do it. I have had great sucess doing it this way. Mesquite carcoal works really well with this type of grill.

Is it true that if you add wood half way when you already have the meat cooking will give the meat a deeper smell and deeper flavor of smoke, maybe too overwhelming?

Great video! I ordered my Gabbysgrill earlier this week. Placed the order on Monday night, it shipped Tuesday morning, arrived at my house on Wednesday! Junior (the owner) makes a great product. I really appreciated your review of this product, your presentation style is very informative. Looking forward to doing my first cook on it tomorrow. I have three tri-tips, 8 lbs of chicken, and 1/4 cord or red oak to experiment with! Going to be a fun weekend!

Dski...Still catching up,I had a chance once to catch a couple of guys using that grill set-up at a Drive-in swap meet near Santa Maria. Both were using Red Oak one doing chicken and one doing beef Tri-tip. Like an old Missouri mule stuck between twp bales pf hay... I'd of starve to death before I could make a choice for either. The 1st guy handed me a Tri-tip...meat and bun...nothing on it...thought I done died and went to heaven...I couldn't eat it fast enough! I bought two more! Then the chicken (my usual favorite)...It was an OMG grilled BBQ moment...again...nothing on it. Just fantastic! Flame wasn't quite as high as yours but I suspect it was pretty close to as good. As you know I'm a low and slow smoke guy but they opened up a whole new world of BBQ grilling Temp regulation is everything and if you folks out there haven't cooked with Red Oak you're missing out! That was 15-20 years ago and every time I fire up my grill to this day my mind immediately goes back to Santa Maria! Great presentation Dski and you don't have to sell me on the rub, the grill, or the Red Oak...looking forward to catch more of your videos.

Hey, man I came across your channel, and you did a excellent job explaining the Santa Maria Grill. Man your chicken was right on point, it looked amazing. Just for conversation try some apple wood or cherry or some pecan ,because for one it burns less hot , and they are a fruit wood and I think you might the flavor better. I enjoy your channel I’d like to have one of those things to I do have some advice for you you mentioned buying that red oak off of eBay you would be a lot better off using your favorite charcoal and then using your Red oak On top of your charcoal fire the The smoke flavor is what you are after. That’s got to be expensive buying Redoak on eBay. One more thing I don’t know where you live at I’m from Kentucky there’s somebody selling firewood on ever corner here so red Oak is pretty easy to get a hold of hickory is also top shelf wood you could try going on Facebook marketplace you probably have people selling firewood there. If not Put a post on Facebook that you are wanting to buy some red Oak or hickory or Apple. Plan B go to craigslist people are always selling firewood there. They also have a section and Craigs list that’s called free a lot of times people believe it or not are giving away fire. Wood. Unless you just have money out the butt just use charcoal the chips you can buy at Home Depot are great get your fire going take your wood chips soak them in water throw them on top of your charcoal it will taste just as good as if you had that whole grill filled up with Redoak. What ever the case you’ll be better off to let that Woodburn down to Coals. I’m not trying to criticize you I’m just trying to help you out brother I’ve got an experiment going on myself I just bought a flat top griddle to go in my Weber gas grill I haven’t gotten it yet but I’m excited like you are but I like your rig that’s pretty bad ass OKGod bless you man and God bless your family keep your hands washed

I really hope you threw away that cutting board!!!! You will never decontaminate that wood cutting board. The grill itself is awesome. Gives me an excuse to buy a new 26” kettle!! If I disappear, check into the wife😂💁

Richard Castaneda Thanks for the comment Richard. Lump does burn much hotter than briquettes. I try to do a mixture of both at times so I can still get some wood flavor on the meat along with the longer burn time of briquettes. Thanks for checking out the video.
