Sev Khamani
Ingredients
Chana Dal - 1 cup
Ginger paste - 1 tsp
Garlic paste - 1-1/2 tbsp
Chili paste - 2 tsp (as per you spice level)
Sugar - 3 tbsp
Lemon Juice - 2 tsp
Chopped coriander - 2 tbsp
Milk - 6 tbsp (in intervals)
Peanut oil - 4 tbsp
Turmeric - 1 tsp
Salt - as per your taste
Mustard seeds - 2 tsp
Method:
Soak 1 cup Chana dal for 5-6 hrs, once it’s ready, then you can grind in mixture, make sure you batter is not so thick and not so thin, it should be medium consistency.
Now take batter and add all the ingredients and mix well.
Heat pan on low flame and add peanut oil 4 tbsp and do a tadka of mustard seeds
Once tadka is ready add the mixture and stir well
Once it’s well stirred then add lid on the pan and add some water on the lid, so that your khamani doesn’t stick at the bottom, let it cook for 15 mins
Now take off the lid and let it cook again and keep adding milk in intervals (2 tbsp each interval)
Once the oil start to separate, then your khamani is ready.
Now add sugar
Add lemon juice
Add coriander and mix well and its ready to serve with sev on top.
Its ready to serve.
