【脆皮烧肉】Crispy Pork Belly
我是「烧肉控」超喜欢吃脆皮烧肉的我,特别制作了 这一集(又是比较“长气”的一集和大家分享)我用了两种不同的方法即:「炸」和「烤」来比较两者的区别!我也分别做了不同的口味 「香辣口味」和「传统口味」跟大家分享。
又是「经验」它告诉我如何去挑选一块完美的猪皮 ^o^ 我们必须挑选布满「猪毛」的三层肉,未经「火烤」除毛的猪皮,这样做出来的烧肉才能达到99%的酥脆度!
以下做出了一个总结, 比较两者的差别
「炸」VS 「烤」
1)烹煮时间 :30分钟 VS 60分钟
2)酥脆度:100% VS 100%
3)困难度:必须掌控油温,若控温不好,容易「翻车」烧焦 VS 有烤箱控制烤温,所以操控相对容易
4)成品完美度:80% VS 90%
5)美味度 :⭐️⭐️⭐️⭐️⭐️ VS ⭐️⭐️⭐️⭐️⭐️

香辣口味 Spicy Flavor
三层肉 | Pork Belly - 450克 | 450g
a) 孜然粉 | Cumin Powder - 1茶匙 | 1Tsp
b) 辣椒粉 | Chili Powder - 1茶匙 | 1Tsp
c) 盐 | Salt - 1/2茶匙 | 1/2Tsp
d) 腐乳汁 | Fermented Bean Curd Sauce- 1/2茶匙 | 1/2Tsp
e) 料酒 | Cooking Wine - 1茶匙 | 1Tsp
传统口味 Traditional Flavor
三层肉 | Pork Belly - 450克 | 450g
a) 五香粉 | Five Spices Powder - 1茶匙 | 1Tsp
b) 盐 | Salt - 1/2茶匙 | 1/2Tsp
c) 腐乳汁 | Fermented Bean Curd Sauce - 1/2茶匙 | 1/2Tsp
d) 料酒 | Cooking Wine - 1茶匙 | 1Tsp
Crispy Pork Belly
I’m the "Roasted Pork Belly" lover, I specially made this episode (again, quite a long video), using two different methods, namely: "Fried" and "Roasted" to compare the difference between the two! I also made two different kind of flavors which are "Spicy" and "Traditional" to share with you.
"Experience" tells me how to choose a perfect piece of pork belly, we must choose a piece of pork belly which is covered with "pig hair" which means the pig skin that has not been dehaired by using "flame torch". Therefore, those pork with "pig hair" on it, can only be roasted to achieve 99% of crispness!
The following is a summary of comparison between
"Fried" VS "Roasted"
1) Cooking duration : 30 minutes VS 60 minutes
2) Skin Crispness : 100% VS 100%
3) Difficulty : The oil temperature must be well controlled. If the temperature is not well controlled, it is easy to get burnt. VS There is an oven to control the roasting temperature, so the temperature control is relatively easy
4) The perfection of the finished product: 80% VS 90%
5) Deliciousness: Stars and Stars VS Stars and Stars
