35-minute dinner - Delicious Shrimp & Pasta with Cream Sauce
Ingredients:
1 lb shrimp (frozen)
Angel hair pasta for 3-4 servings
1 ½ cups heavy whipping cream
½ cup chicken broth
1 tbsp lemon juice
½ tsp salt
½ tsp pepper
½ cup chopped fresh parsley
½ cup grated parmesan cheese
Directions:
1. Put frozen shrimp in bowl of cold water until thawed - about 15 min.
2. Bring a large pot of water to a boil (for the pasta)
3. Add the pasta and cook until al dente - the pasta can cook while working on the sauce and shrimp
4. In a skillet, combine the cream (heavy cream should not curdle when you add the lemon juice), lemon juice, salt, pepper and chicken broth.
5. Bring to a rolling boil and then add the thawed shrimp, boil until the shrimp is cooked
6. When the pasta is done, drain and pour into a large Pyrex bowl (heat resistant)
7. Add the parsley to the shrimp and sauce and cook for an additional 1-2 minutes
8. Add the grated parmesan cheese to the sauce and mix together for 1-2 minutes
9. Pour the sauce over the pasta, sprinkle 1 tbsp of grated parmesan on top and serve.
