Sichuan chili oil (Szechuan chili oil, 辣椒油) is an awesome condiment in Chinese cuisine that can compliment many dishes like dumping, meat dishes, and noodles. In this video, I made a large batch of chili oil so I can enjoy it for many months. I will show you how to infuse the oil in various spices including Sichuan numbing pepper and cook the Sichuan chili flakes with it. It's very easy to make this chili oil at home and easy to make it good even for novice cooks. The recipe is for the pure form of chili oil. If you want a ready-to-eat version, or a chili sauce, add minced shallots, garlic, and additional flavoring such as soy sauce, and black vinegar. The recipe is in the video.

Ingredients:
1 gallon of vegetable oil (canola oil, peanut oil, any neutral oil)
Aromatics:
10 star anise
2 cinnamon sticks
6 bay leaves
8 tbsp Sichuan peppercorns
4 cardamom pods
5 tsp cloves
8 cloves garlic crushed
2 tsp sesame seeds
10 Peanuts or almonds
4 shallots halved
Pour hot oil into:
3 cups of Sichuan chili flakes (1 cup Sichuan 2 cups regular Chinese or Thai pepper flakes)
3 tbsp of gochugaru
3 tsp salt
