I am sharing with you the most authentic, original and crispy simit recipe I have ever made in my life, I will tell you something like this in the video that you will be very surprised.
CRISPY STREET SQUID
Glass size I use: 200 ml
✔️1 glass of sugar (200g)
✔️1 and a half glass of water (300 ml)
For the dough:
✔️1 kg of flour
✔️2 and a half glasses of water (500 ml)
✔️1 tablespoon of butter
Half a packet of fresh yeast
✔️1 tablespoon granulated sugar
✔️2 teaspoons of salt
✔️ Enough toasted sesame seeds
For the syrup:
Put the sugar in a deep saucepan and burn it until it turns a dark caramel color. Add the water and Boil over medium heat until the hardened sugar melts completely and becomes liquid. Let the liquid caramel syrup cool.
Put all the dough ingredients except the flour in the kneading bowl and mix. With the addition of flour, we get a very hard but soft dough. Divide the dough into peas slightly larger than the palm. Cover the dough and let it sit for 15 minutes. If you are having difficulty, it will help to slightly wet your hands. Fold the dough that is long enough and fold it in half, joining the ends tightly. then the golden sesame and place them on the platter. Take it from the tray that we are going to cook by enlarging it) and shaking the excess sesame.
Increase the temperature to 200 and cook until golden brown.
