Simple nut cake with chocolate - #Recipe
Ingredients:
Sponge cake:
3 large eggs L - yolks and whites separately
110g of sugar
80g wheat flour (I used cake flour)
25g sugar-free cocoa
1/2 teaspoon of baking powder
90ml of oil
To soak:
50 ml of water
2 tablespoons of lemon juice
1 teaspoon of powdered sugar
Custard cream:
300 ml of milk
100g of sugar
20g of wheat flour
1 vanilla or cream pudding without sugar
1 yolk
180g of butter at room temperature
80g ground hazelnuts
Cream cream:
350ml whipping cream 30% or 36% (I recommend using 36% to make the cream stiffer and more stable)
2 teaspoons of cream fixer
1-2 tablespoons of powdered sugar
1 teaspoon of vanilla extract (can be replaced with sugar and vanilla)
Chocolate icing:
90g dark chocolate (I used chocolate with 64% cocoa solids)
130ml whipping cream 30% (dessert cream)
Cream for the rosettes:
250ml chilled whipping cream 30% (cream for desserts)
1 tablespoon of powdered sugar
2 teaspoons of cream fixer
Additionally:
chocolate biscuit topping
