Ingredients:
3-4 lb pork butt shoulder
Clover Honey
Five Spice Seasoning
Hoisin sauce
Oyster sauce
Red fermented bean curd (2 pieces)
Soy sauce
Shaoxing Cooking Wine
3 Garlic Cloves (minced)
Brown Sugar
Directions:
Cut the pork butt into 4 long strips. ( cut with the grain)
Marinade:
In a bowl, Mix:
3 Tbsp Hoisin sauce
1/4 cup Soy sauce
4 Tbsp Brown sugar
2 tsp Oyster sauce
1/4 cup Shaoxing Cooking Wine
2 pieces Red fermented Bean curd
1 tsp Five spice seasoning
3 Tbsp Honey
3 cloves freshly minced garlic
Save 1/4 cup of the marinade for later
Place marinade in the freezer bag ( helps save space in refridgerator)
Place pork butt into a freezer bag with the marinade
Massage pork for 1-2 minutes to get marinade into each meat crevice
Marinade for 24 hours
After marinade time, let it sit to room temp for about 30 min- 1hr
Make the glaze
Glaze
1/4 cup of the marinade
3 Tbsp Honey
Mix together
Preheat oven 400 degrees
Get a pan with a cooling rack. Line the bottom of the pan with foil
Pour water onto the foil just until it is covered
Put the pork butt in the oven for 15 min
After the first 15 min:
Take the pork out and and glaze it on all sides
Place pork back into the oven for 15 min
After the 2nd 15 min:
Glaze the pork again
Place the pork back into the oven for 10 min
Glaze the pork again
Place the pork back into the oven for 10 min
After a total of 50 min
Broil the Char Siu for 3-5 min depending on the oven( Broiling gives it nice crispy edges)
Total 55 minutes cook time
Take the Char Siu out of the oven
Rest the Char Siu for 10 min before cutting it
Serve and Enjoy!
