In my opinion, the better Chicken Rice stalls in Singapore are those that offers "Ginger Sauce" to go alongside the chilli sauce and the rest of the dish. Chicken rice may seem like a one dimensional dish, but the technique and flavours involved makes it so much more complex. Thank you for shedding light on Singapore local delights! Cheers.

@@andy_cooks Best to honor this dish by calling it by it's proper name *Hainanese Chicken Rice* when referred to as a general principle. Not everyone knows what it is by just calling it "chicken rice" which could mean anything. This goes for all dishes that particular to a certain culture's cuisine.

Nice one Chef Andy, I am from the Philippines, I’ve been here in Singapore for 15yrs and Chicken rice became my comfort food, you absolutely hit all the points when it comes to a perfect chicken rice, in fact the ones that earned Michelin starred are overrated, those prepared by uncles and unties in other hawker centers are far better with a perfect ginger and fresh chilli sauce and of course the fragrant rice cooked in coconut cream (gata) can’t wait to see your version of it.

Great video Andy. I was in Singapore about 12 years ago and fell in love with the chicken rice. I tried both the traditional and roasted, and to be honest I couldn’t decide which I liked better! Both were amazing, I think the rice and getting the sauce right is as key as getting that chicken right. It’s a package deal haha. Can’t wait to see your version

Tong Fong Fatt is my favourite chain of chicken rice hawker in Singapore and I will eat it every time I see it. Soy sauce dressing for chicken is the best I ever had in Singapore. Meat is moist with lots of jelly under the skin. I was screaming for you to try Tong Fong Fatt when you sampled the second stall at Maxwell food centre. Great video Andy.

Surprisingly, a really good and consistent Chicken Rice is at the Kopitiam stalls, any stalls in fact. I've been to many and they somehow have been very good, while although not the absolute best out there but still consistent enough to eat there time and again.

I love Maxwell. But unfortunately, I came a bit too late so the rush started. Lots of reserved tables, in the end a group of Pinay girls offered me to sit with them so I could have my Hainanese chicken rice. One of them laughed and said that she understood my desperation. I absolutely loved Singapore. Such a great place for multi-asian kitchens. Japanese, Korean, Chinese, Malay, South Indian food... all great. But the highlight of the trip was definitely Hainanese Chicken rice, Roast duck, Din tai fung and items from the Nasi Kandar centres.

The ‘secret’ to having individual grains of the rice distinctly…is mixing old and new rice. Old rice being aged rice >1 year. So the restaurants will mix 50:50 of new and old rice.

As a S’porean travelling around many parts of Malaysia I’ve learnt to appreciate and enjoy the multitude of cooking styles from kampong to grand restaurants; then add in the ethnic mix, and we have food heaven👍👍😋😄

chicken rice is one of the best foods in the world. it's surprisingly easy to make, to, and I agree -- the broth is so refreshing and an important side. sometimes I like a bit of winter melon in it (when it's in season), but otherwise just cilantro, salt and white pepper are great in the already ginger-y, green onion-y broth. garlicky/gingery jasmine rice (with shallots and pandan if you have them) is fantastic, a side of cucumber and tomato, sweet thick soy, fresh chili sauce and then of course the perfectly poached, slightly cooled chicken with gelatinous skin is one of my favorite meals to make.

I dont know bout others but man. No man can resist chicken rice. As a Malaysian living in Kuching Sarawak, im surrounded with friends that whenever we dont know what to eat, chicken rice will be the go to choice. never go wrong. Its a simple dish but with a rather complicated steps of preparation and cook. Cant wait to see Andy's version of chicken rice.

Tian Tian may be popular at lunchtimes but it's the most overrated chicken rice ever. If you're not getting the soup and the 2 or 3 sauces (chilli or ginger & spring onion or dark soy/sesame oil/chicken stock) with it then you're missing out. Plenty serve it with some cucumber on side too. Xiang Ji Hainanese Chicken Rice at Haig road hawker market is excellent. I make this dish at home in Australia for us as my wife is Singaporean 😍 One of my favorite dishes to cook. The chicken should be suspended in water on poultry hooks too so the skin doesn't get torn 😉

Singapore was kicked out by Malaysia and so far, Singapore has been progressing rapidly, way better than Malaysia. That's why it's 3:1 now. Maybe 4:1 in the future.

Couple of things you can do to elevate chicken rice, 1. Ginger sauce. its yellow in color and is a fantastic accompaniment slightly bitter, gingery sort of paste, complements the fatty chicken very well. some stalls have it in just grated with some salt, some have it mixed with scalding oil. i prefer having the regular grated version of this. 2. scallion/Spring onion and ginger. very similar to the above mentioned ginger sauce but has a different flavour profile, its like a step ahead. so grated ginger, plus a nice amount of salt, plus cut scallions/spring onions and then use really hot oil to pour over the mixture and stir. ( my favorite accompaniment.) 3. The citrus flavour you taste with the chilli is actually calamansi and in my opinion, it is essential to the flavour of the chilli and cannot be substituted.

One of my favourite dishes out of the many fantastic dishes in Singapore ( 18 months working there in the mid ‘90s. Have made it myself a couple of times. Sounds boring but is utterly delicious.

As a person who is not Singaporean and never went to Singapore I can affirmatively say that Singaporean locals do know how to make a good tasting rice. Like I'm impressed! Like a very modern and technological Country still follows their culture and their traditional way of making food how their ancestors did. I hope Andy you can also make a good tasting Hainanese Chicken Rice like the locals do there. And for anybody wondering why is it called Hainanese Chicken Rice when it is made in Singapore, it is a good question, the answer is that most of Singaporean people are Chinese by ethnicity and most of them are from southern China like Hainan and their ancestors made the rice like this back in China so that's why it is called the unique "Hainanese Chicken Rice". I hope my information will help you.

Hi Andy, love your videos and long story short. Origin of hainanese chicken is from Hainan, a province in southern China. In fact I'm a hainanese myself, if you get the chance to go there it's very different from ones made in Singapore or Malay.

You can not find Singapore chicken rice in Hainan. The way of cooking chicken and the dipping sauce are completely different. Local Singaporean, whose parents were from Wenchang, Hainan.

Hey Andy go try the chicken rice at the basement of Katong Shopping Centre. Juicy chicken fragrant rice and home style soup. All served with complimentary pickled salad. That’s where the Easties in Singapore go for their chicken rice fix.

I've always enjoyed Tong Fong Fatt more than Tian Tian or Ah Tai, glad to find more folks who appreciate their interpretation! Overall it's tough to find a place that does the Chicken, Rice, and Sauce (Chilli or Ginger) equally well. Hence the difficulty of concluding who does it best, considering Malaysia, Thailand, Hong Kong, etc all have skin in the game. Reminder to show more love to your favorite chicken rice place while they are still around.

Thank you for this video, Andy. Nicely done and quick to the point. Glad you enjoy SG local foods and wanna cook it. We love our chicken rice. There is another hainanese dish which you must try which is Hwa Heng Hainanese Beef noodles, located at the Bendemeer Market & Food Centre. Like Nam Kee, Hwa Heng also transcends 3 generations. Be prepared to stand in line for 50 minutes but it is So worth the wait.

my local Chinese cafes served chicken and rice with ginger and shallot sauce. A unique sauce finished with boiling oil poured on. Mybe not really traditional but "Australian Style"

Personally, I would get the chicken drumstick whenever I get chicken rice. No matter it being “roasted” or “Hainanese” style. You pay a little more, but the meat much more tender.

for me the best version of chicken rice is the Thai version - Kao Mun Gai. if you're a fan of the sauce the Thai version of the sauce is by the best!
