These British cream style scones are flaky and tender. Dress them up with your favorite add ins.
1 1/2 cups all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1/4 cup sugar (use granulated or brown sugar)
1/4 cup cold butter (salted)
1/4 cup chocolate chips
1/4 cup toffee bits
1 egg yolk
1/2 cup heavy whipping cream
1/2 tsp vanilla.
Combine flour, baking powder, salt and sugar in a bowl. Stir to combine.
Add in cold butter cut into small pieces.
Use a pastry blender or your fingers to cut butter into dry ingredients. You want it to form small pebble size pieces (Should only take about 1 minute).
Add in chocolate chips and toffee bits (or other add ins you might be using)
Combine liquid ingredients including egg, whipping cream and vanilla.
Pour into dry ingredients and stir together. It will look a bit dry and shaggy.
Pour onto a lightly floured surface and use your hands to bring dough together.
Form into a round disc, about 3/4 - 1 inch thick.
Cut into two or four equal size pieces.
Place on a parchment lined baking sheet.
Optional: Brush with cream and sprinkle with coarse sugar.
Bake at 350 degrees F for 18-10 minutes or until they are lightly golden brown on the bottom.
Variations:
Lemon Blueberry Scones: Add in 1 Tbsp lemon juice (replace 1 Tbsp of cream) and 1 tsp lemon zest, 1/2 cup of blueberries.
Orange Cream Scones: Add in 1 Tbsp orange juice (replace 1 Tbsp of cream), 1 tsp orange zest and 1/2 cup of white chocolate chips.
Maple Pecan Scones: Add in 1/2 cup chopped pecans. Use brown sugar instead of white sugar. Make a drizzle of powdered sugar and maple syrup or maple extract to drizzle over scones.
Almond Apricot: Use almond extract instead of vanilla and add in 1/2 cup of chopped dried apricots.
