Butter Swim Biscuits

Ingredients:
- 2 1/2 cups all-purpose flour
- 1 tablespoon sugar
- 4 teaspoons baking powder
- 2 teaspoons kosher salt
- 2 cups buttermilk
- 1 stick (8 tablespoons) unsalted butter, plus more for serving
- 2 tablespoons honey
- Flaky sea salt, for serving
- Jam, for serving
Directions:
1. Bring your smoker up to 450°F. To melt the butter, place the stick of butter in an 8-by-8-inch baking dish and set it on the grill while it comes up to temperature.
2. In a large bowl, whisk together the flour, sugar, baking powder, and kosher salt.
3. Pour in the buttermilk and stir with a wooden spoon until you have a thick dough. It's okay if there are some dry spots.
4. Once the butter has melted in the baking dish, remove it from the grill.
5. Scrape the dough into the dish with the melted butter and spread it to the edges.
6. Use a butter knife to slice the dough into 9 equal squares.
7. Place the dish back on the grill and bake for 22 to 25 minutes, until the biscuits are golden brown on top and a toothpick inserted in the center comes out clean.
8. Remove the dish from the grill and drizzle honey over the top. Sprinkle with flaky sea salt and let the biscuits cool in the dish for at least 10 minutes before slicing and serving with extra butter and jam.
