Drying process is one thing you mess up. There are a couple of things you didn't do. 1) They keep the duck head intact or at the very least the neck. They pump air through the neck. This will separate the meat and skin. EDIT: The separation will allow the fat to rendered. The process will fry up the skin and have an easier time achieving crispy skin. 2) Spices goes inside the cavity. They mix with hoisen sauce to create a paste. They add some ginger and green onion with the paste. Sew the cavity shut (why you want the retain the neck for the same reason). You don't salt the skin, adding salt can easily burn the skin. In fact, you don't want to any spice on the skin for the same reason. 3) Pumping air will make the skin will be loose. The hot water will tighten the skin. Some people like to add stuff while you boil the water like star anise, orange peel and etc. It will add aroma on the duck as you bathed it in hot water. Lastly is the drying process.

Amazing comment it’s a very hard dish and lots of people don’t realize we cook it with the seasonings coming out from the inside and soaking into the duck and it gets cooked by hanging it in a traditional oven made for the Peking duck process

The best way to get crispy skin with Peking duck, in addition to putting the warm water on the skin, is to expand it by getting in between the skin and the meat with an air pump/bicycle pump. Also, maybe it would be best to turn the marinade for the duck into a glaze, or just use hoisin sauce.

recommendation: for extra skin crispiness separate the skin from the meat. It adds great flavour and a lot of crisp. Still looks delicious though.

It looks really good for homemade. They have these special ovens to hang the ducks in to get the right texture. Kinda impossible to get right w/o the oven. Also, gotta eat it the traditional way: pancake w duck, cucumber, the white part of a green onion, and hoisin sauce.
