I have this smoker . Works very well .. I suggest you buy the charcoal basket .. mine came with the charcoal basket…

Been wanting to buy this smoker for some time now. I thought of adding 3 more racks in between the existing racks. I sometimes help out with BBq plate sales. Thank you for the post. I’ll be following. 👍

Good cook, enjoyed It, I have the same cooker, I usually leave both stacks only half open and always use water, Super bowl the water pan boiled dry and started a smoker fire, the whole cooking chamber was a blaze. I took everything off at first quarter and at some time unknowingly it ignited. I left it continuing to cook, cause I wanted to cook off the chicken grease from 28 thighs and a 19lb brisket, didn't think the water pan would boil dry. I didn't find out this happened till 3 days later, when I went to clean it out. Watch those flames out those stacks in the garage.

Try wrapping the ribs in butcher's paper throughout the cook, & replace spritzing with a mixture of apple sauce & apple cider vinegar.

Most of the cooks on this smoker are experimental. I've always wrapped the ribs and spritz with Apple cider vinegar and water. I'm not a fan of Apple sauce. So far the the charcoal basket is doing the trick.

Looks awesome. Mmmmmmm! Looking at buying a smoker. Would be interested in your opinion (pros and cons) of that smoker.

I'll start with the cons, which are minor still need to be addressed. I think the coal grate doesn't have enough openings to allow good airflow. The ash has nowhere to go and can smother the fire. You'll be stoking it to get the ashes to fall through the slots. The last is build quality. If you can go to the store and inspect it in person, that will be best. If you order it, you may get one that has poor welds, warped metal, or doors that don't seal correctly. I have another video talking about that. Other than that, I like it. It has plenty of cooking space to feed the neighborhood. It holds heat in very well and I get even temps from top to bottom. Btw, this smoker should have a drip pan that comes with it. I've seen and heard of some not having the pan.

So how is the smoker doing for you now? Thinking about buying one. Any paint peeling on inside of smoker? I read a review a guy posted his peeled inside.

It's still doing well. Some smokers and grills do peel but it's from moisture and grease build up. It's called carbonized grease. It's not a fault of the smoker or grill. It just happens. A quick scrub with a grill brush and it's all gone. Apply a light coat of oil afterwards. If it's peeling and rusting, I would say it was not seasoned and or not being maintained. Don't let that stop you from purchasing one!

They use a microwave if at work. Most are them at work. If they took any home, I'd say microwave again. Not many people warm things in the oven nowadays...myself included.

It'll hold temps for a good 45 minutes or so before you have to add more fuel.

With the wsm, you don't have to check the fire every 45-60 minutes like you do with the old country. Set it and forget it. However, the old country can cook alot more food than the wsm.

@@95fallon You can remedy that with a fire basket, replace the charcoal tray with expanded steel, & add fireclay bricks under your fire.
