A light lunch and perfect for the warmer months, this recipe is fool-proof and easy to prepare ( boiling the egg is the hardest part, which is saying a lot )
Ingredients for 1 person (adjust to your preference):
*Bowl*:
chopped kimchi
sliced avocado
sliced smoked salmon
1 boiled egg
1 bowl cooked rice
some crispy seaweed
any leafy herb
*Dressing*:
2T lemon juice
2T ginger soy sauce*
1t sesame oil
1T honey
1T sesame
*How to make ginger soy sauce:
1 cup water
6T soy sauce (tamari)
20g sliced ginger
1T coconut sugar
1.Put everything in a sauce pan,
2.Boil for 10 mins
3.Turn off hob, brew until cold.
4.Sieve off ginger
5.Transfer to glass bottle, store in a fridge up to 1 month
