I actually remove the casing entirely before seasoning it. I do the same thing with my hot links before throwing them on the grill. Gives them some great flavor from absorbing the smoke as well as getting rid of that "pop" when bitting into them.

In Wisconsin we make great sausage. We’re told to not break the casing during the cook and lose all that flavor. Have never felt the need for more seasoning. Maybe a sauce dip is good.

Couldn’t agree more. I’m from upper Michigan and we are pretty religious about the natural casings. If you have a good recipe no reason to season it up like this. I feel like everyone nowadays go so overboard in seasoning, it’s like just eat a scoop of it if you want that much flavor imparted into it and I’m sure it’s a sham selling point for them

as a person who does a similar thing to their sausage i’d recommend making the slits a little further apart, that way you can use any seasoning and it won’t be too salty or overpowering and cutting the larger pieces in half makes nicer looking sausage pieces if you cut them at an angle.

I always do the X cuts on sausages, it’s great with his BBQ rub and a little more brown sugar. My favorite is his BBQ rub and honey sprinkled on pulled pork, doesn’t need any sauce.

love country pleasin' they are right down the road from us - you gotta go visit them sometime they have some good stuff. as much as this looks good and i always trust your recipes, so far, for me, nothing beats just throwing it on the smoker and letting it cook next to my ribs or wings until it starts splitting on its own. glazing it every so often. gonna have to give this method a try though

But, I'm pretty sure this guy knows this. He really knows his way around a grill. Bet he just like some variation from time to time.

letting the juices out is good for getting a bark, after all, dehydrated sausage jerky is delicious and lacks those juices. But to advocate on your side, one could say you can maintain the integrity of the casing trapping the juices inside, and allow the bark to form upon the casing outer skin, making it crisp and you can season atop it as it cooks. i thing either way is viable, cooking is an art after all.

I'm sorry but the whole point of a sausage is to keep the juices inside the skin, keeping it moist and melt in your mouth flavour. People who put holes in them to let the fat drain out or cut it like this makes them lose almost all their flavour. Hence you have to put SO much extra flavour (that they don't need) to compensate for it. You might like it, but it's something I've learnt is best not to do!!

I did this for the very first time in my dish that I do. Sausage potatoes green peppers onions red peppers and some seas need with some jalapenos. I did this for the first time in my family was blown away when I did it on the the kettle Webber grill. I'm new to the scene and when I did that I was blown away.

I smoke my sausage like this too. When I cut it up I mix it into a casserole dish full of baked beans with brown sugar, red bbq sauce and bacon. Smoke it until the sausage peeking out of the beans starts to blacken. If somebody holds a spoonful of this over your head, your tongue will beat you sensless trying to get to it!
