These Smoked Thick Cut pork Chops turned out amazing! Today we show you how to cook those really thick center cut pork chops. Some people butterfly and grill but we decided to rub them up with Tipsy Mushroom and smoke them over hickory. We show you how to brine them to keep them from drying out. We sauced in the last 20 minutes and they turned out awesome! If you like to grill pork chops, you can also smoke them and then finish off on the grill as well.

Here is the text for the Brine (if anyone cares):
We're gonna make a quick brine for these pork chops:
take four cups of water
add a half a cup of brown sugar
three tablespoons of kosher salt
four cloves of garlic roughly cut
two tablespoons of dried thyme
and then mix it together
this is a quick brine that'll work for chicken.
