Suji ka halwa is your classic everyday delicious North Indian sweet made with fine semolina, sugar, ghee, nuts, and flavored with cardamom powder.
In Maharashtra, this sweet is called Sheera. Semolina is called suji, sooji, or rava. This easy melt-in-the-mouth halwa recipe comes together in about 15 minutes.
Sooji halwa is also known as Rava Sheera in Western India and Rava Kesari in South India. The method of preparation is more or less similar, with a few ingredients being changed here and there.
Though rava or semolina remains the key ingredient. In some variations, milk is added instead of water and is called as milk Kesari. For flavorings usually, cardamom powder is added.
This halwa is also made for an auspicious occasion or a pooja ceremony. It could also be a festive occasion like Diwali, Ganesh Chaturthi, or a religious ceremony conducted in your home or you just want to have something sweet. It also serves well as a sweet morning breakfast or an after-meal dessert.
Ingredients:-
1 CUP DESI GHEE (देशी घी)
3/4th CUP SEMOLINA (सूजी)
2 TBSP BENGALI GRAM FLOUR (बेसन)
2 TBSP WHOLE WHEAT FLOUR (गेहु का आटा)
1 CUP SUGAR (चीनी
4 CUPS OF WATER (पानी)
1 TSP GREEN CARDAMOM SEEDS (हरी इलायची के दाने)
2 TBSP CHOPPED ALMONDS AND CASHEW NUTS (बादाम और काजु)
PINCH OF EDIBLE YELLOW COLOUR (खाने योग्य पीला रंग)
DRY FRUITS AND SAFFRON for garnishing
Method:-
In a kadai add ghee and heat it up.
Add sooji and roast on medium-low flame till light golden brown in color, it will take around 8 to 10 minutes.
Add besan and aata, mix, and roast for 2 minutes until light golden brown in color.
Now add water and bring it to a boil.
Add sugar and keep stirring on medium-high flame and ensure that no lumps are formed.
Once sugar melts add dry fruits and yellow food color.
Mix it and cook further for a minute.
Halwa is ready.
Garnish with your choice of nuts.
