Traditionally, Tofufa is coagulated with gypsum powder (calcium sulfate). Nowadays, many replace it with GDL (glucono delta lactone) or gelatin. We have done video using GDL and now we try on Gelatin.
Our previous Tofufa video received many feedbacks that it's troublesome to make and boil pure soybean milk and asked if packet soya bean milk can be replaced? Some have difficulties in getting GDL (Glucono delta-lactone). Btw, GDL is a naturally-occurring food additive used as a coagulant agent for tofufa. This make the tofufa soft and melt in your mouth. However if you lazy to make fresh soybean milk, and couldn't find GDL at your nearby stores, then this will be a perfect recipe for you.
The texture is soft and wobbly , it's 90% similar to Tofufa. Just the texture is not melt in your mouth type. So we will call it as Soya bean milk pudding rather than Tofufa. This pudding will be served cold and drizzle with Gula Melaka. This recipe can make about 4-5 bowls of pudding.
✅Pro: Easy to find ingredients. Can use packet soya bean milk.
❎Cons: Only can serve cold, and it needs at least 5 hours to set.
🚩Note: Becareful when you remove the pudding from mould. Do not over soak in warm water it will melt the gelatin. Or if it's too troublesome, you can just add gula melaka into your bowl and serve!

RECIPE:-
PALM SUGAR SYRUP
----------------------------------
PALM SUGAR 椰糖 (200g)
WATER 清水(100ml)
PANDAN LEAVES 班兰叶 (2 PCS)
BRING TO BOIL 煮沸
SIMMER FOR 15 MIN 焖煮15分钟 (UNTIL DISSOLVED)
STRAIN & SET ASIDE 过滤备用
SOYA BEAN MILK PUDDING

GELATIN POWDER 吉利丁粉 (10g)
WATER 清水 (80ml)
REST FOR 5 MIN 泡软5分钟 - STIR TO DISSOLVE 拌匀
UNSWEETENED SOY MILK 无糖豆奶 (400ml)
HEAT SOY MILK 小火煮豆奶 (LOW HEAT)
PANDAN LEAVES 班兰叶 (2 PCS)
ADD IN GELATIN 放入吉利丁
STIR TO COMBINE 拌匀
STRAIN AND FILL INTO BOWL 过滤倒入碗
REMOVE BUBBLES 除去泡末
REFRIGERATE AT LEAST 5 HOURS 放在冰箱冷藏至少5小时
TO REMOVE PUDDING FROM BOWL

DIP IN 10 SECONDS 快速浸10秒
REMOVE FROM BOWL 布丁倒入碗
DRIZZLE PALM SUGAR ON TOP 配上椰糖浆
