I've recently started pickling eggs mainly for the Covid lock down. I use half gallon jars. I have a batch in the fridge for the last week and I patiently wait 15 days or more. This batch has Serranos, Chipotles, Onion, Garlic, Parsley, Oregano, Black pepper balls, Mustard Seeds and of course the typical Apple Cider Vingar, Water, Salt, Sugar Substitute "Low Carb!" But I've been having a ball making them, not fond of peeling tho. I'll be trying your trick at boiling them. Thank You and God Bless 🙏

pro tip: when you are finished filling the jar, put a potato on the top and when you put the lid on, it will submerge the eggs at the top to ensure they are all under the brine. You could use an onion as well but if you dont want to add to the flavor, use a potato. Also, the only reason for heating the brine is so that you can dissolve sugars, salts, etc. just use warm water. Hot water takes the heat out of the peppers or other flavorful items like garlic. and dont over stuff the jar, as you can see the eggs against the jar will not get brine.

Start with cold water add the eggs, bring to a boil and boil for 3 mins. Take off heat and let it set for 15 mins. with a lid on the pot and then dump hot water out and run cold water onto the eggs, till the eggs are cool to the touch. Put them into a bowl and put in the Frig. When cold they will peel very easy. Try it and see. Then make your pickled eggs. Also put your eggs into a jar with sliced beets and onions more eggs, more beets and onions some pepper corns and a 1/2 cups of vinegar and add some beet juice, Put a lid on it and put it in the Frig for a week and enjoy.

Me myself will not pickel my eggs after they hatch lol. I know what you meant to say lay. But this is a really good video. Personally I can't do the sugar because of being boarder line diabetic. If you turn the jar upside down everyday until you go to eat them it will also help keep the spices steered up and into the eggs.

Just made a batch last night. Only had 4 eggs left though. Had excess brine so I put in another jar and threw a head of garlic in.

Thank you. May I ask why you dilute the vinegar with equal amounts of water? This will halve acidity levels, which is the whole point of preservation by pickling.

Because there is like a sticky glue on the rim once you can. It can wear off and cause the lid not seal if you reuse
