Holy smokes, I would never cross that Chef. Knowledge of sugar stages by touch alone when lacking a thermometer is pretty serious shit. I know Chefs do some crazy stuff behind the scenes that most working people couldn't handle, but I would have never imagined this technique - I'd guess this is probably a 500+ level "when your thermometer has disappeared and you need to get those fucking treats out STAT" advanced course.

It's actually not as scary as you think. I'm a student of hers and she and the other Chefs all teach us how to do this. Chef House is a big bundle of knowledge!

Chef, I respect the seriousness with which you take your craft. Perhaps this was a weedout course at culinary school. Could the same learning be achieved by having students watch a thermometer as the sugar boils, and using a spoon to drop samples into ice water, and feeling them afterward? This way they learn what different stages of boiling sugar looks like by sight, and then later the thermometer can be removed from the mix. To others clutching their chests, everyone ultimately makes their own choices. What Chef has taught here is a suggestion. If you decide to try what she does, that's on you.

Very special video. I'm so glad I came across it. The only nit-picky thing I disagree with is she's not numbing her finger, she's actually making it cold. So it's really safer than it sounds.

1. To everyone who’s complaining this lady is crazy to use hands at risk: She’s training chefs who are to become professionals one day. They should learn the hard way. And they should ensure their safety just the way she taught them. And there’s nothing to be scared. u saw how she numbed her hands before it?? This is a simple technique if u become mindful. There’s a risk in everything u do in a kitchen and the ones who dare to be chefs aren’t babies. 2. And to everyone who says using hands is unhygienic: PS. At this temp the harmful microbes on hands (if any) die. And if u say there can be still, pls don’t eat anything coz kitchenware and food like dairy also contain microbes. If u r scared abt using uncleaned hands, same goes with utensils too. Take the risk when u eat food outside, coz who knows what sanitation happens? There r countries who make uncooked food with hands as well n they eat with hands too. Relax people.

Oh, yeah. I’ve used a similar tactic when I made my dishwater too hot. Works wonders. Though I just ran my hand under coldest water from the faucet until my whole hand is nothing but cold.

In some countries they eat by hand n do u think they are ill all the time? They wash hands with soap n water. Just like u wash ur spoon and fork. Nevertheless germs get killed here

Wooden spoons crystallize sugar 😂 u won’t get the result I want. What’s wrong with using hands? And what u r talking abt can be applied for utensils also. What if they r uncleaned? Therefore when buying food from outside there’s always a risk whether they use hands or not. Here in Sri Lanka we use hands to make uncooked sambals too. Only thing is we wash. We eat with hands too FYI. She’s training chefs so don’t be crazy. They r becoming professionals n they should learn the hard way first.

@@kimbari90 it's about touching the sugar with your bare hands. All chefs frown upon that. You should be able to distinguish the hardest of the candy you want by sight and smell and if anything, drop a piece of the candy into ice cold water to see how it forms. You could use a regular thermometer or candy thermometer, anything but using your bare hands. It's just so unprofessional and unnecessary.... But that's my own opinion and everyone has their own thoughts and opinions. I work in fast food for 8 years and restaurants for 4 years. Sure it doesn't seem like a lot but I've been cooking my whole life and if you ever took a food handlers test, this would make you fail, especially if it was an in-person test...

@@Razhali @Rashelley Morgan so I'm a student of hers (Chef House) and she teaches us to do this. As does any other chef in our program. I've actually done this in almost every baking class since learn how to make Italian buttercream in baking 2. There is nothing unprofessional about it. It's the best way to know where in the process you are as a thermometer isn't always accurate. I can tell you from personal experience my thermometer has said my sugar is at the correct temperature but my final product isn't right. And cooking sugar doesn't really have a smell. I've taken a food handler test this isn't something that will make you fail. Again I go to the school she teaches at and am in a sugar class currently in a sugar class there is nothingwrong with this method. I don't what brought on these opinions you have.

@@ultraviolet9677 No, I used to watch my granny do this, more experience than skill, As the sugar heats it changes rapidly and using a thermometer is slow. Doing it this way gives you a accurate and instant readout once you reach caramel if you dont get it right you get a burnt tast. I have read that if you dip the ring end of a skewer in the between pearl and soft ball stage (235 f) and blow, a bubble will form and briefly float. My gran did not use ice (we had no fridge)

i did this today for an assignment lol i have absolutely no skill and i was really nervous i was going to get burned but putting your hand in ice till it nubs works i didnt even felt the heat :)

My comment is not to start a debate about if this technique works or not. Its about responsibility as a teacher in a kitchen. If you do this in a hotel/restaurant the chef will and should tell you to use a safer technique, as this can cause a liability for the establishment that you work for, and the people around you.
