I went ahead and used flap meat. I marinaded it with chimmichurri sauce, I then seared it for 4 min per side. Then let it rest for 5 min before slicing it. I added quesadilla cheese to a burrito tortilla and topped it with tons of meat. Garnished with cilantro, red onion, lemon juice and a creamy chipotle sauce. Who’s in?

3 tbsp sour cream
1 tbsp @bendsauce chipotle
1 tsp cilantro
Juice of 1/2 a lemon
Salt pepper to taste
