Recipe:
2.5 lbs well-marbled pork shoulder cut into two-bite chunks
Marinade:
1-1/2 cups pickle brine
1 apple
1/2 medium onion
3-4 cloves garlic
1/4 cup prepared mustard
Salt and pepper to taste
Blend the marinade ingredients and marinate the pork 24 hours. Skewer the meat with a bit of onion between each piece. Grill on over medium heat turning frequently to avoid burning.
