Mangos are in season again! Sticky rice with mango is the easiest mango dessert I can think of. A Thai restaurant favorite, it looks complicated and intimidating to make at first, and maybe even turns out that way in practice. Steaming soaked rice isn't as straight forward as it sounds, depending on the steamer have, how the rice is spread out, and how well the water is drained, it is very possible to get uneven steamed rice that is overcooked/soggy on the bottom and undercooked/dry/hard on top. Rice cook is a much easier method that requires no planning ahead or skills/experience. It yields a slightly different, but highly reliable and arguably more pleasant result. If you enjoy mango sticky rice at Thai restaurants, try making it yourself with a rice cooker. It's as easy as press start, and flavor with sweetened coconut milk. The amount of coconut milk and sugar can both be adjusted to taste. This is completely fool proof, and a recipe worth making over and over again.
note: sticky rice, aka glutinous rice or sweet rice, is a low amylose, high amylopectin variety of rice, characterized by opaque color (when uncooked) and soft, sticky texture once cooked. It comes in long grain, short grain, even purple/black varieties, and within this glutinous rice sub-genre, all of them are fairly good substitute for one another. Because of sticky rice's rich flavor & texture, it is commonly used for desserts in all kinds of Asian recipes, sometimes just simply sweetened with sugar. It is quite distinct from regular rice varieties, which is much firmer, and not as easily good for desert with such simple flavoring & preparation.
